The Great Hampshire Sausage & Pie Competition 2014

Sausages and pies from around the county were under scrutiny from a panel of expert judges at the Great Hampshire Sausage & Pie Competition organised by Hampshire Fare on 18th March 2014.

The contest, sponsored by Dalziel, Lucas Ingredients and BPEX and supported by the New Forest Marque attracted 196 entries from 29 butchers. Categories included Traditional Pork Sausage, Speciality Pork Sausage, Charcuterie, Meatballs and Faggots, Black Pudding, Hampshire Sausage and new for this year, Young Sausage Maker.

Entrants to this year’s competition came up with some tempting and intriguing new sausage flavours including ‘Banana Split’, ‘Goat’s Cheese and Watercress’ and ‘Venison and Chocolate’. Several of these innovative flavours came from entrants to the Young Sausage Maker category.

This new category attracted 13 entries from apprentices working at local butchers and also studying at colleges including Sparsholt College and Highbury College. One apprentice really impressed the judges with his Pork and Toffee Apple sausages which were awarded full marks and secured Sam Bundy the title of Young Sausage Maker 2014. Sam attends Sparsholt College and is an apprentice at LJ Smith Butchers in Eastleigh, he was surprised by the win: “I really didn't expect to win! Pork and Toffee Apple just came to me as a flavour idea and it seems to work!It's great to be here at the competition amongst such skilled butchers. I'm looking forward to seeing the sausages on sale in the shop later this week.”

The competition was held at the Holiday Inn in Winchester with a panel of 12 professional judges and 12 local guest judges. They assessed the 13 categories looking at texture and structure, taste and smell, appearance and colour and ease of cutting. Frances Slade from Ladies in Pigs, judged the Speciality Sausage Category and was impressed by the entries: “The standard of this year’s entries has been excellent. We’ve had to be really critical to find fault. I’m really pleased to have had the opportunity to be involved in the competition.”

An impressive 90 Gold Awards, 58 Silver Awards and 29 Bronze Awards were presented with trophies going to one winner in each category. The title of Supreme Champion 2014 was awarded to Southampton butchers, Uptons of Bassett for their Traditional Pork Sausage after they picked up 13 Gold Awards and won 3 categories. Owner of Uptons, Simon Broadribb was delighted by the success: “'I was amazed by the results. I am really proud of my team of staff and cannot wait to celebrate with them. The competition is very important to us and it really creates a buzz amongst local butchers. It helps us to raise awareness of what we do and celebrates Hampshire's hardworking butchers.”

9) Hot Eating Pies – Uptons of Bassett (Southampton), Oxtail and Ox Cheek
10) Ready Meals – Soles Butchers (Alresford), Moroccan Lamb
11) Black Pudding – Owtons Butchers (Southampton)
12) Hampshire Charcuterie – Laverstoke Park Farm (Laverstoke), Beef Biltong
13) Young Sausage Maker – Sam Bundy, apprentice at LJ Smith Butchers and Sparsholt College – Pork and Toffee Apple

Mike Wright, Chairman of Hampshire Fare commented on this year’s competition: “The competition highlights our county’s talented butchers who are dedicated to delivering the best homemade sausages, pies and more to their customers. Yet again the number of entries to the competition has grown and it has been wonderful to see local young butchers getting involved in the new Young Sausage Maker category.
